Ingredients (12)

1 1/2 cup cashew nuts
3 cup desiccated coconut
1 Tbs lemon juice
1/2 tsp vanilla — paste
1/2 cup honey — raw
1 Tbs coconut oil
5 avocado
3/4 cup lemon juice
2 Tbs lemon — zest only
3/4 cup honey — raw
1 cup coconut oil
1/2 tsp vanilla — paste

Grind nuts in a food processor.
Add the remaining ingredients and pulse in your machine until well combined.
Use a spring form cake or quiche tin.
Press your mixture firmly in the tin, spreading it evenly with your hands.
Puncture holes gently with a fork into your base and put into the fridge.

Put your coconut oil in a jar and dip in hot water till it becomes liquid.
Blend all your ingredients together in a power blender until smooth.
Pour onto the refrigerated base and spread evenly.
Refigerate for about three hours, or until set.
Remove from fridge and decorate with blue berries, goose berries of gogi berries.
