Heat the basil pesto in a frying pan. Crack each egg into the pan when the basil pesto is hot and sizzling. Fry each egg sunny-side up to your liking.
Toast SASKO Low GI Whole Wheat Brown Bread.
Cut each avo in half and then into thin slices.
Lay the sliced avo on the hot toast, and season with salt and pepper.
Top with the pesto fried egg and garnish with microherbs.
