Apple bran muffins

These apple muffins are grainy, fruity and tasty. Store in an airtight container lined with paper towels between the muffins to absorb the moisture. They’ll last for four days – if the kids can resist them!

Ingredients (12)

375 ml bran — flakes
250 ml Buttermilk
60 ml oil
eggs
180 ml brown sugar
2,5 ml vanilla — essence
250 ml flour
5 ml Baking powder
5 ml Bicarbonate of soda
salt — just a pinch
80 ml raisins
apples — chopped

Method:

Preheat the oven to 180 °C. Linea muffin pan with paper cases.

1 Mix together the bran flakesand buttermilk and set asidefor 5 minutes.

2 Combine oil, egg, sugarand vanilla, then add to thebuttermilk mixture.

3 Sift together the flour, bakingpowder, bicarbonate of sodaand salt.

4 Add to the buttermilk mixtureand stir until just blended.

5 Add raisins and apples, thenspoon into prepared muffin tins.Bake for 15 minutes and serve.
