Almond yellow rice

Ingredients (9)

500 ml water
250 ml rice — long-grain, uncooked
2 cinnamon — stick
4 cardamom — seeds
3 ml turmeric
5 ml salt
50 g almonds — blanched
15 ml sugar
45 ml butter — or margerine

Method:

Bring water to the boil. Add rice, cinnamon, cardamom seeds, turmeric and salt.
Cook, uncovered, until fairly soft (approximately 20 minutes). Drain in colander and rinse with cold water.
Return to saucepan with almonds and sugar, and dot with butter.
Steam, covered, over medium heat for 10 minutes.
For yellow rice, add 90 ml (1/3 cup) raisins or sultanas instead of almonds.
