Almond and raisin couscous
|30 ml||fresh chillies — 573|
|50 g||raisins — seedless|
|500 ml||water — boiled|
|25 g||almonds — flaked and toasted|
|45 ml||fresh parsley — chopped|
Place first five ingredients in
casserole dish. Stir well to dissolve
salt. Cover, microwave 100% (High)
power, 4 to 5 minutes.
Leave to stand, covered, 5 minutes.
Add almonds and parsley, fluff up with

salad, or as an accompaniment to chicken, meat or fish.
Dry toast almond in a hot dry pan. Keep watching and shaking them ! Remove from pan when lightly browned and use immediately. Or use the microwave.Pllace 5g butter or margarine in a bowl, melt in
microwave oven. Add almonds, stir to coat with butter, microwave on
100% (High) power, 2 to 3 minutes, or until toasted. Stir twice during cooking. Spread out on absorbent kitchen paper to
drain and cool.
