Air fryer shepherd’s pie with McCain Crispy Skin On Oven Chips

Ingredients (11)

3 tbsp coconut oil
700 g lamb mince
1 onion — finely chopped
1 garlic clove — crushed
1 cup McCain Green Beans
1 cup McCain Sweet Corn
1/2 cup vegetable stock
1-2 tsp Worcestershire sauce
salt and black pepper
450 g McCain Crispy Skin On Oven Chips
30 ml olive oil

Method:

In a large pan on a high heat, add 3 tbsp of coconut oil and the mince. Brown the mince quickly and set aside, leaving the fat in the pan.

Lower the heat to medium and sauté the onion and garlic. Add frozen McCain Sweet Corn and McCain Green Beans and cook for about 10 minutes, until the onions are translucent and the vegetables are starting to soften.

Return the mince to the pot and add the vegetable stock and Worcestershire sauce. Taste for seasoning, then allow to cook until the stock has reduced.

Transfer to a heat-safe dish and top with McCain Crispy Skin On Oven Chips. Cook in an air fryer set to 200°C for 13–15 minutes, until the chips are crisp and golden.
