Air-fried shallot and garlic hummus

Budget-friendly hummus that uses less oil and sweet caramelised shallots for a wholesome sweet twist on a savoury hummus.

Ingredients (8)

2-3 shallots — peeled and halved
2 garlic cloves — peeled, left whole
1 tin chickpeas — reserved the liquid
1 tbsp tahini
1/2 lemon — juiced
olive oil
salt — season to taste
bagel seasoning — optional

Method:

Drizzle the shallots and garlic with olive oil, season with salt and air-fry at 200°C for about 7 minutes or just until the are nicely golden and soft.

Blitz the chickpeas with the prepared shallots and garlic together along with 1/2 of the reserved liquid, tahini, lemon juice, a small drizzle of olive oil and salt.

Blitz until smooth. Pour into a container, top with bagel seasoning and refrigerate until needed.
