The trademark of a great steakhouse is consistency. A consistently good cut which is consistently cooked exactly to your liking is where it’s at.
It’s not a small matter of preference when you declare to all within earshot EXACTLY how you would like your steak done. It’s a BIG deal. Make a mistake once, and you’re out!
Personally, I like mine so that if I gave it a shot of penicillin it would give a resounding “Moooo” and gallop off my plate. Others prefer theirs cremated, and most are somewhere in between. But at the end of the day it’s a personal thing not to be trifled with.
