Ingredients (18)

8 sausages — pork
1 onion — chopped
4 garlic — cloves, chopped
1 can tomatoes — chopped
1 tsp cayenne pepper
2 tsp paprika
1 tsp turmeric
1 tsp cinnamon — ground
1 tsp ginger — ground
1 tsp freshly ground black pepper
2 tsp cumin — ground
2 tbsp oil
1 handful apricots — dried, chopped
1 handful fresh coriander — chopped
1 handful almonds — flaked
400 ml stock — chicken
3 tbsp tomato paste
1 can chickpeas

Method:

blend all spices and coat the sausages.heat oil in casserole dish,add the sausages and allow them to brown.add the onions,garlicand cook for a few minutes over medium heat.add all remaining ingredients,except the coriander,almonds and chickpeasand bring to the boil .reduce the heat and simmerfor 1/2 hour.remove the sausagers from the pan ,add the chickpeas.simmer until the sauce has thickened,add the sausagers almonds and season stir in coriander, serve with plian couscous
