THAI BUTTERNUT



 
 

Ingredients

 
  • 1
    Butternut (medium to large)
  • 1
    Onion - chopped
  • 1 - 2
    Chillies (chopped) or a tsp crushed chillies
  • 1
    cloves
    Garlic - crushed
  • 1
    tsp
    ginger (finely chopped)
  • 1
    tsp
    Curry powder
  • 1
    can
    Coconut milk
  • 1
    tsp
    Mustard seeds
  • 1
    pinch
    Salt
Servings: Change Serving
 
 

Method

 
“Pop” mustard seeds in a pot (dry pot), return to dish. Brown onion, return to dish. Cook butternut until tender. Add remaining ingredients, as well as mustard seeds and onion. (Serve with a sprig of fresh dhanya or parsley if you have.) Simmer, serve and enjoy.
