Sultana loaf

  • 1
    cup of sugar
  • 4
  • 1
    cup sultanas
  • 1
    cup milk
  • 1
    mixed spice
  • 8
    self raising flour
  • 1
    well beaten egg


Place sugar, margarine, milk, and spices into a saucepan.
Cook on medium heat until margarine melts and ingredients start to boil.
Turn the heat down and simmer gently for 5 minutess. Remove from heat and allow to cool for 10 minutes.
While waiting, break the egg into a bowl and beat well.
After mixture has cooled, sift flour into the mixture in saucepan 1 cup at a time. Mix very well before adding the well beaten egg.
Place in a lined loaf tin.
Set oven to 180°C. Place the tin in the middle of the oven and bake for 30 minutes.
Reduce heat to half and leave for another 30 minutes.
