Ingredients (10)

50 g butter
2 leeks
200 g mushrooms
300 g haddock
1 can sweetcorn — creamed
1 eggs
250 ml milk
250 g cottage cheese — spring onion-and-chives-flavoured
100 ml flour — self-raising
250 ml cheddar cheese — grated

Method:

Sautee sliced leeks & mushrooms in butter.
Cook & flake haddock and add to mixture.
Add all remaining ingredients except cheddar cheese, season to taste.
Spoon into buttered dish (20 x 20cm)
Sprinkle cheese on top.
Bake at 160 C for about 50 min.
Variation: replace haddock with crispy fried bacon or smoked snoek.
Serve with salad and crusty bread.
