Sausage and veggie bake

Ingredients

 
  • 1
    kg
    pre packed roasting veg mix
  • 1
    pack cubed butternut
  • 1
    kg
    cocktail cheese griller sausages
  • 4
    cloves
    garlic in skin
  • 1
    handful
    fresh basil
  • 1
    handful
    fresh parsley
  • 1/2
    c
    extra virgin olive oil
  • 1
    pinch
    salt and pepper to season well
  • 1
    pack black mushrooms sliced thickly
  • 1
    c
    grated parmesan cheese

Method

 
Arrange in a large oven dish all the vegtables, garlic cloves and sausages.
Season well with salt and pepper, coat well with olive oil and toss.
Bake at 180°C until the veggies are tender and the sausages is cooked. This should take around 45 minutes.
Add the mushrooms and bake a further 10 minutes.
Remove, toss and add a final coat olive oil and then sprinkle with the fresh herbs, roughly chopped, and the parmesan.
Serve with a crusty loaf and pesto.
