Roasted Pork with Marmelaide and bacon bits

Ingredients (4)

half can marmalade
500 g bacon — bits
1 kg pork roast
200 ml lemon juice

Method:

Fry Bacon bits in a bit of olive oil and allow to cool.

Cut small slits in and around the pork. Stuff the slits with marmelaide jam and bacon bits. Cover pork with Marmelaide jam, bacon bits and lemon.

Cook in oven for +_ 2.5 hours at a slow heat, basting the pork with the same ingredients every half an hour.
