Ingredients (6)

300 g prawns — cooked
1 fresh coriander
1 handful rosa tomatoes
1 cucumber
150 ml peanut, chilli and coriander sauce
2 bunches noodles — vermicelli

Method:

Thinly slice the rosa tomatoes and cucumber.
Cook the noodles as per the packet instructions.
Mix all the ingredients together, (reserving some of the coriander for a garnish).
Plate and garnish with the fresh coriander.
