Ingredients (8)

340 g potatoes
1 eggs
85 g flour
Seasoning
60 g cheese — grated
oil — for frying
230 g mixed vegetables — green variety
60 g cheese — grated
60 g black olives

Method:

Mash the potatoes.

blend in the egg, flour, seasoning and cheese to give a firm dough.

Heat oil in a large frying-pan.

Mould the potatoes mixture in the pan to a large pizza shape anf fry for obout 10 minutes.

When golden brown underneath, turn over and fry for further 10 minutes.

Meanwhile, fry the washed and sliced vegetables until just tender.

The pizza can be served from the pan or transferred to a serving plate.

Ifso, remove it carefully before with vegetables and grated cheese.

Grill the cheese just before serving and garnish with black olives.

The pizza can be prepared gently in the oven just before serving.

Brush with a little oil or butter to keep really moist, and cover with foil.
