Ingredients (6)

bread — Melba toast
lemon — zest only
fresh chives — finely chopped
english mustard — hot
sour cream
beef — rare roast, slices

Method:

Combine sour cream, hot English mustard and 2 teaspoons finely chopped chives in a small bowl. Spoon a little of the cream mixture over 20 mini melba toasts. Top each with a piece of thinly sliced rare roast beef. Garnish with remaining chopped chives and lemon rind.
