Ingredients (9)

1 cup water
2 eggs
1 cup flour
1 tbsp white vinegar — white
1 tbsp smooth apricot jam
1 tsp Bicarbonate of soda
1 tsp vanilla
1 tsp Baking powder
1 cup sugar

Method:

Beat all cake ingredients for 5 to 7mins on high speed. Pour into greased baking pan (should not fill more than one third of pan height) and bake for 40 minutes. Place drip tray underneath to catch spills.

Melt butter into sugar, add other topping ingredients and boil for 2 minutes on high.
Strain lavendar stalks. Prick hot cake with fork and pour topping over.

Garnish with lavendar flowers and serve with double cream vanilla ice-cream.

Topping:
125g butter
125ml milk
125 ml demarara sugar
lavendar stalks
lavendar flowers for garnish
vanilla pod
