Ingredients (8)

80 g Sheridans gelatine
10 ml Food colouring
125 ml water — cold
5 c sugar
500 g coconut
eggs — whites only
10 ml
350 ml water — boiled

Method:

Put sugar and 2 egg whites in mixing bowl. Dissolve 80gr of gelatine in 125ml cold water. Wait a bit for gelatine to become spongy. Add the 350ml boiling water into the gelatine mixture, stir until all gelatine is dissolved. Pour boiling gelatine mixture into sugar and start on slow speed your electric mixture, slowly turn to high speed. Keep on mixing until it becomes high in volume and looks like sponge. Pour in a greased tin. Wait about 2 hours. Put on damp cloth, and then sprinkle with coconut. Cut into slices with warm knife. (Dipped into boiling water) Roll cubes into coconut Eat and enjoy
