Ingredients (6)

wine — dry white
2 – 3 celery stalks — chopped
mussels — cleaned
fresh chillies — 573
spring onions — bunch, chopped
2 garlic — cloves, crushed

Method:

Run mussels under water and scrub until clean.  In a large saucepan heat the olive oil, add chopped celery and spring onions, cook until softened.  Add one or two glasses of white wine and then add mussels.  Cook until opened.  Serve with brown bread or melba toast.  Delicious as tapas with pre-dinner drinks.
