Potato and biltong salad

A fanatastic SA braai accompaniment to indulge in.



  • Six medium sized potatoes, cooked with skin
  • 1/2 homemade mayonnaise
  • Three spring unions chopped
  • 2 medium sized red unions, thinly sliced
  • Italian parsley for decoration
  • 250
    good quality thin sliced biltong


Homemade mayonnaise: One tin condensed milk
One egg yellow, beaten
Juice of one large lemon
One heaped tablespoon mustard powder
Salt and pepper to taste
Mix the condensed milk with the egg yolk. Mix mustard, salt, pepper and lemon juice and add to first mixture. Add more mustard and seasoning to taste. Cut potatoes in blocks and mix with mayonnaise. Pack the potatoes, biltong, spring union and red union in layers starting with the potatoes in a salad bowl and refrigerate. Sprinkle parsley over before serving.
