Potato and biltong salad

Ingredients (10)

Homemade mayonnaise
1 tin condensed milk
1 egg
1 lemon — juiced
1 tbsp mustard powder
salt and black pepper — to taste
500 g potatoes — cooked
4 spring onions — chopped
1 red onions — thinly sliced
1 handful fresh Italian parsley — to garnish
250 g biltong — thinly sliced

Method:

Homemade mayonnaise

Mix the condensed milk with the egg yolk. Mix mustard, salt, pepper and lemon juice and add to the first mixture. Add more mustard and seasoning to taste, if desired.

Cut potatoes in blocks and mix with mayonnaise. Pack the potatoes, biltong, spring union and red union in layers starting with the potatoes in a salad bowl and refrigerate. Sprinkle parsley over before serving.
