Litchi chicken salad

Ingredients (13)

wine
250 ml cream
15 ml jam — apricot
15 ml chutney — mild
10 ml tomato purée
15 ml jam — apricot
1 litchis
5 ml fresh chillies — 573
lemon — zest and juice
400 ml mayonnaise
2 onion — chopped
750 ml chicken — roasted, skin removed and sliced into bite sized pieces
5 ml curry powder

Method:

1. Sauté onions in oil until transparent and then add curry powder, chutney, jam, wine, tomato paste, lemon juice and the juice from the tin of litchis. Mix in 15ml mazina to thicken.
2. When sauce has thickened, allow to cool.
3. Then add the mayonnaise and cream.
4. Lightly stir the sauce through the pieces of chicken. Place in a beautiful glass salad bowl and allow to cool.
5. Serve on shredded lettuce and decorate with fresh or tinned litchis.
6. Serves 10 (depending on appetite)
