Chicken, Blue Cheese & Broccoli Pasta

Ingredients (10)

freshly ground black pepper
blue cheese
onion — finely chopped
chicken breast fillets — skinned, deboned
200 g broccoli — florets
pasta — of your choice
garlic
2 tbsp olive oil — for cooking
salt
750 ml cream

Method:

1. Prepare Pasta as you normally would, until al dentè. I prefer the small bows or Penne.
2. Heat a heavy based frying pan and heat the olive oil.
3. Cut the chicken breasts into bite sized pieces and lightly fry in the oil until golden brown. Remove from heat.
4. Fry the finely chopped onion (and garlic if you choose to use it) in the frying pan.
5. Add the chicken back to the pan and pour in the cream until it starts to bubble. Add a little ground black pepper and a pinch of salt.
6. Turn down the pan until the mixture starts to simmer. Once the cream starts to “thicken”, or the liquid has “reduced”, add the small broccoli florets to steam them, until they are bright green and still crunchy.
7. About 2 minutes before serving, crumble the blue cheese into the pan.
8. Once the blue cheese has melted, mix the pasta in and serve with a delicious salad and breads.
