Ingredients (8)

250 ml Buttermilk — or yoghurt
1 c sugar
75 ml honey
150 g butter — melted and cooled
10 ml Baking powder
eggs — large, lightly beaten
125 ml coconut
2 c flour — cake

Method:

Preheat oven to 180°C and grease a muffin pan.

Combine the dry ingredients in a large mixxing bowl.

Melt the butter and honey and allow to cool. Add the eggs and buttermilk.

Mix the wet ingredients with the dry ingredients but be careful not to overmix.

Spoon batter into muffin moulds and bake for 12 – 15 minutes.
