Gorgonzola spring rolls & chilli tomato jam

Ingredients (10)

250 g gorgonzola cheese
1 spring onions
1 tsp freshly ground black pepper
1 spring roll wrappers
2 eggs
500 g cherry tomatoes
100 g sugar
2 tsp red chillies — sliced
1 tsp salt
100 ml vinegar — white wine

Method:

For the jam – Combine the sugar,tomato,chilli and vinegar together in a small sauce pan.
Bring to a simmer for 20 min till mixture becomes thick and jam like.

For the Spring Roll –
combine cheese,pepper and sliced spring onions until well mixed.

Separate a single sheet of spring roll pastry and cover the rest with a damp towel.
Mix the two eggs to make an egg wash.
Brush the sheet of spring roll pastry and fold into the shape of a rectangle.
Place a teaspoon of the cheese mixture in the center, bring in the sides and roll into a spring roll sealing the edges with egg wash.
Repeat until mix is finished, approx 30 spring rolls.

Heat oil for deep frying to 180°C and fry spring rolls for 2minutes until lighlty golden brown, serve warm and with home made jam.
