Delish tomato & basil soup

A quick and delicious tomato soup.
 


 
 

Ingredients

 
  • 30
    ml
    canola oil
  • 1
    large red onion
  • 4
    garlic cloves
  • 1
    kg
    whole fresh tomatoes
  • 1
    handful
    chopped basil
  • 2
    tbsp
    brown sugar
  • 30
    ml
    old brown sherry / port
  • 1
    sachet Ina Paarman sundried tomatoes
  • Salt and pepper to taste
Servings: Change Serving
 
 

Method

 
Heat oil in large heavy based pot.
Add and saute onions and garlic for 1 minute.
Blend whole tomatoes.
Add to pot and boil ±40mins.
After 20min add chopped basil, brown sugar & glug OB Sherry.
Add pkt Ina Paarman sun dried tomatoes.
Add salt & pepper to taste.
When cooked blend with hand blender in the pot till smooth.
Serve with crusty bread.
Enjoy!
