Chocolate mousse



  • 20
    White Marchmallows
  • 200
    (2x slabs) Good Dark Chocolate
  • 1
    Evaporated/Ideal Milk (Chilled)
  • 20
    Sugar and a pinch of salt
Servings: Change Serving


Take about half a cup of the Ideal milk, pour into a pot, then add chocolate, sugar,brandy(optional) and salt.
Melt over very low heat.
Beat the rest of the Evaporated/Ideal Milk until foamy and fold into the melted mix.
Place in fridge untill firm.

Tips and Notes: Take care to slowly fold the Evaporated/Ideal Milk into the melted mix to reserve the bubbles.
Folding is a technique to 'blend', DON'T stir, that will deflate the bubbles.
For example take part of the mixture and bring up and over... thus folding, continue until mixed.
