Breakfast Muffins



 
 

Ingredients

 
  • 2
    large eggs
  • 400
    ml
    milk
  • 500
    ml
    self raising flour
  • 3
    tsp
    baking powder
  • 2
    handful
    grated cheddar cheese
  • 100
    g
    sandwich ham
  • cayenne pepper

Method

 
Quick and easy to make and great for a breakfast on the beach! 1. Break 2 eggs into a measure jug. Add milk to make a total of 500ml. Mix well. 2. Into a bowl: Self raising flour, baking powder, cheese, and ham (can be swopped for chopped viennas). Mix together. 3. Add egg mix and stir until well mixed. 4. Spoon into sprayed paper muffin cups and sprinkle cayenne pepper ontop. Take care with pepper! 5. Bake at 180C for around 10-15 minutes or until done. Serve as is or with your favourite spread.
