Ingredients (8)

1 can mussels — smoked, in vegetable oil
2 avocado — cubed
200 ml mayonnaise
1 tsp sugar
1 pinch salt
1 pinch black pepper — freshly ground
1 tsp vinegar — white
4 spring onions — thinly sliced

Method:

– Drain Mussels from oil. Keep the oil
– Add mussel meat and cubed avo to serving bowl
– Mix mayo, sugar, vinegar, salt and pepper together
– Add mixture to bowl and stir lightly. Try to keep the avo in pieces
– Dress with sliced spring-onions
– Refrigerate till cold
– Best served as a starter with coarse/toast bread, or as a salad with pork chops.
