Sundried tomato puree

Ingredients

  • 2
    cup
    sun dried tomatoes - rehydrated in hot water
  • 1
    cup
    extra virgin olive oil
  • 40
    ml
    red wine vinegar
  • lemon zest of 1 lemon
  • 1
    tsp
    flaked salt
  • 1
    pinch
    freshly ground black pepper
 

Method

 

Put all of the ingredients into a blender and blend until smooth.
