200.00 g snoek — smoked
60.00 ml mayonnaise
5.00 pinch salt
5.00 pinch black pepper — freshly ground
8.00 ml fresh coriander — chopped
45.00 ml butter — room temperature
10.00 prosciutto — sliced

Method:

Flake the fish and mix with the mayonnaise, salt, pepper and herbs. Butter the pumpernickel.

Spread the fish mixture on half the bread and cover with
the remaining slices.

Carefully
remove the crusts and quarter
each sandwich diagonally.
