Prawn skewers

Ingredients

  • 500
    g
    whole prawns
  • FOR THE RUB:
  • 1/2
    tsp
    chinese 5-spice
  • big pinch dried chilli flakes
  • 2
    tsp
    coarse salt
  • 1/2
    tsp
    white pepper
  • juice of 2 limes
  • 2
    tsp
    ghee, melted
  • extra lime wedges, to serve
 

Method

 

Place the prawns in a shallow dish.

Using a pestle and mortar, grind together the 5-spice, chilli flakes, salt and pepper, then mix with the lime juice and ghee. Rub all over the prawns and leave for 20 minutes.

Thread prawns onto pre-soaked skewers and cook over a medium heat until slightly charred and cooked through (about 2½ minutes each side).

To serve: Serve hot with extra salt and pepper, and lime wedges.
