125.00 g butter
210.00 g sugar
2.00 eggs — large
250.00 ml potatoes — finely chopped
60.00 ml syrup
250.00 ml jam — green fig
270.00 g flour — sifted
100.00 g pekanneute, gekap
5.00 ml ginger — ground
1.00 ml sout
Versiersel
100.00 g butter
210.00 g icing sugar
5.00 ml vanilla — esesence
100.00 g cheese — room temperature
6.00 ginger biscuits — finely chopped

Method:

1. Smeer ‘n Prestige 20 cm-ringkoekpan.
Room botter en suiker tot lig. Voeg die
eiers een op ‘n slag by en meng goed ná
elke byvoeging.
2. Roer die patat en stroop by, en daarna
die stukkies vye.
3. Meng die meel, neute, gemmer en sout.
Roer dit by die bottermengsel in en skep
in die bereide koekpan. Bak in voorverhitte
oond vir een uur of tot ‘n toetspen skoon
uitkom. Laat afkoel.
4. Versiersel: Klop botter en versiersuiker. Voeg die vanieljegeursel by en vou die roomkaas in tot goed gemeng. Smeer oor die afgekoelde ringkoek en versier met neute, stukkies vy en fyngedrukte gemmerkoekies.
