Ingredients (10)

For the hummus
400 g tin chickpeas — rinsed and drained
1 tbsp tahini
6 tbsp olive oil
1 garlic clove
1 lemon — juiced
salt and freshly ground black pepper
1 cup peas — blanched
¼ cup fresh mint
1 lemon — zest only
salt and freshly ground black pepper

Method:

To make the hummus base, blend chickpeas, tahini, olive oil, lemon juice and garlic in a processor and season with salt and black pepper to taste.

For the pea and mint flavour variation, add the peas, mint and lemon zest to the base and blend until smooth.
