French toast Madeira hearts with dark chocolate flavoured coffee

Ingredients (11)

French toast:
280 g cake — madeira loaf
2 eggs — large
15 ml milk
olive oil — for frying
2 shelled pistachios — finely chopped
4 tsp castor sugar
coloured sprinkles
DRINK:
125 ml evaporated milk
125 ml coffee
180 ml dark chocolate — finely chopped

Method:

For the French toast, slice the Madeira cake into 8 thick slices. Use a heart cookie cutter with a diameter of 50mm to cut out a heart from each slice. Combine the eggs and milk and whisk until smooth. Heat a splash of oil in a large pan over medium heat. Dip the hearts, on both sides, into the egg mixture and fry for a minute on each side until golden and firm. Drain on kitchen paper.

Combine the finely chopped pistachios and caster sugar and coat the warm hearts in this mixture. Add a sprinkling of heart sprinkles, if preferred.

For the drink, heat the evaporated milk and coffee in small saucepan over medium heat until simmering. Remove the mixture from the heat, stir in the chocolate and stir until smooth and melted. Whisk in a splash of honey, to sweeten.

The drink can be served on the side and also be used as a dipping sauce for the French toast.

TIP:
For regular French toast replace the Madeira cake with thickly sliced white bread. 1-2 day old white bread works best.
