Double cheeseburgers in a muffin tray

Ingredients (12)

6 hamburger buns
for the mince:
500g beef mince
1 onion
2 tbsp tomato paste
10 ml Worcestershire sauce
2 garlic — cloves, minced
1 tomatoes — tin, chopped
salt and freshly ground black pepper — to taste
FOR THE BURGERS:
1 gherkins — sliced in rounds
12 cheese — slices, cooked until crispy

Method:

Heat a pot on medium heat and saute the onion in a glug of oil until soft and translucent. Add the tomato paste and stir for 3 – minutes to release the bitterness. Add the garlic and stir for another minute – taking care not to burn it. Season with salt and pepper.

Add the Worcestorshire sauce and stir. Put the heat up to high and add in the beef mince. Stir and allow to cook until browned. Add in the tinned tomatoes and bring the mixture to a boil before turning down the heat to a gentle simmer. Stir every 5 minutes and allow the liquid to reduce and the mince to get thick and saucy.

While the mince is cooking, cut 6 burger rolls in half and remove the inside. Place the halved of roll into a muffin tray and then place a slice of cheese in each. Top with the mince and then a sprinkle of gherkins. Top again with another slice of cheese and pop under the grill for 10 minutes until melted and delicious.

Cool slightly before serving.
