Beer braaied beef short ribs

Ingredients (9)

2 kg beef — short ribs
1 1/3 cup sugar — dark brown
6 garlic — cloves, finely chopped
2 Tbs Worcestershire sauce
1/4 cup tomato sauce
1 cup beer — dark
1/2 cup vinegar — malt
4 fresh thyme
3 star anise

Method:

Place the ribs in a pot and cover with water. Bring the water to come up to a simmer and par cook the ribs for about 30 mins.

Whisk the sugar, garlic, sauces, beer, vinegar, thyme and star anise in a bowl.

Drain the water and pour marinade mixture over the ribs, and allow to cool and marinate for about an hour in the fridge.

Have the braai nice and hot so that the meat and marinade caramelize beautifully. As it is already cooked the ribs will probably only take about 5 – 10 mins to cook. Baste the marinade on while ribs are on the braai.

Once the ribs are done, transfer to a serving dish and add a squeeze of fresh lemon juice.
