Bacon Parmesan potato nests

  • 6
    large potatoes
  • 1
    packet bacon - cooked
  • 11/2
    Parmesan cheese - grated
  • 1/2
    melted butter
  • 1
    fresh rosemary


Place the potatoes in cold, salted water and bring it up to the boil. Take the heat down to a simmer and allow them to cook until just tender but not cooked all the way through. Set aside to cool slightly.

Brush an oven tray with butter and place the potatoes down. Using a masher, roughly squash each potato. Brush with more butter, season with salt and the fresh rosemary and place into the oven for 20 minutes.

Remove from the oven and sprinkle the bacon and a handful of Parmesan over each potato nest. Place back in the oven again for 15 minutes or until golden and crispy.

Serve immediately.
