Ingredients (11)

250.00 g butter
500.00 ml sugar
2.00 eggs — extra-large
5.00 ml vanilla — essence
625.00 ml flour — cake
500.00 ml coconut
500.00 ml oats
10.00 ml Baking powder
7.00 ml Bicarbonate of soda — dissolved in milk
salt — pinch
500.00 ml puffed rice

Method:

Preheat the oven to 180 ºC and grease a few baking sheets with butter or margarine, or spray with non-stick spray. Cream the butter and sugar together until light and creamy. Add the eggs one by one, beating well after each addition. Stir in the vanilla essence. Add the cake flour, coconut, oats and baking powder and mix. Add the dissolved bicarbonate of soda, mixing well. Finally add the puffed rice. Roll the mixture into walnut-sized balls and arrange on the prepared baking sheets. Flatten with the back of a fork and bake for about 20 minutes. Cool slightly on the baking sheets, then arrange on wire racks to cool completely. Store in airtight containers.
Makes about 70 biscuits.
