Young leaf salad with mangetout

    mixed young salad leaves

    sugar

    mangetout, blanched and refreshed
  • 250
    g
    white mushrooms, thickly sliced
  • 12
    black olives
  • 1
    hard-boiled egg, finely chopped
  • 30
    ml
    toasted sunflower seeds
  • CREAM VINAIGRETTE
  • 125
    ml
    fresh cream
  • 15
    ml
    cider vinegar
  • 2
    ml
    mustard powder
  • 1
    clove garlic, crushed
  • salt and milled black pepper
 

Method

 
Arrange salad leaves on a platter and sprinkle with sugar. Add mangetout, mushrooms and black olives. VINAIGRETTE: Whisk ingredients together briskly in a bowl. Top salad with dressing and sprinkle with hard-boiled egg and sunflower seeds. Toss just before serving.
