Ingredients (10)

125.00 ml water — boiled
150.00 g raisins
100.00 g brown sugar
15.00 ml butter
130.00 g flour — wholewheat
120.00 g flour — cake
5.00 ml Baking powder
5.00 ml Bicarbonate of soda
2.00 ml salt
175.00 ml yoghurt — fruit flavoured

Method:

Preheat the oven to 180 ºC (350 ºF.) Spray a muffin tin with 12 hollows with non-stick spray.
Pour the boiling water over the raisins and cool slightly.
Mix the brown sugar and butter together. Add the dry ingredients and mix slightly. Make a hollow in the centre and add the raisin mixture and the fruit yoghurt. Blend well, but don’t overmix otherwise the muffins will have a flat crust. Turn the mixture into the prepared tin and bake for about 20 minutes or till a testing skewer comes out clean when inserted into the centre of a muffin.
Makes 12 muffins.
