Yellowtail with baby potatoes

    olive oil
  • 30
    freshly chopped parsley
  • 30
    freshly chopped thyme
  • 30
    freshly chopped origanum
  • 15
    lemon juice

    baby potatoes, halved
  • 10
    whole cloves garlic, unpeeled
  • 1
    fresh yellowtail fillets
  • salt and freshly ground black pepper


Preheat the oven to 200 ºC (400 ºF). Spray an oven pan with non-stick food spray or grease with butter. Blend the olive oil, parsley, thyme, origanum and lemon juice. Arrange the potatoes and cloves of garlic in the prepared pan and brush with half the oil mixture. Bake for 30 minutes uncovered in the oven, or until the potatoes are tender. Stir occasionally with a spatula. Season the fish with salt and pepper on both sides, move the potatoes to one side and arrange the fish in the pan. Pour the remaining oil mixture over the fish and bake for 10-15 minutes, or until the fish is done and flakes easily with a fork. Serve with a crunchy salad. Serves 4-6.
