Ingredients (9)

30.00 ml fresh chillies — 573
2.00 onions — medium, chopped
4.00 celery stalks — chopped
1.00 butternut — large, peeled and cubed
3.00 carrots — peeled and cubed
10.00 ml fresh ginger — freshly grated
10.00 ml lemon — zest only
2.00 Litres stock — vegetable
250.00 ml lentils — red

Method:

1. Heat the oil in a large saucepan and sauté the onion, celery, butternut, carrots and ginger for 5 minutes.
2. Add the lemon rind, stock and lentils and bring to the boil. Reduce heat, cover and allow to simmer for 20 minutes, or until veggies are tender. Season to taste and serve with wholewheat bread.
