Yellow veggie soup

    olive oil
  • 2
    medium onions, chopped
  • 4
    sticks celery, chopped
  • 1
    large butternut, peeled and cubed
  • 3
    carrots, peeled and cubed
  • 10
    freshly grated ginger
  • 10
    grated lemon rind
  • 2
    vegetable stock
  • 250
    red lentils


30 minutes
1. Heat the oil in a large saucepan and sauté the onion, celery, butternut, carrots and ginger for 5 minutes. 2. Add the lemon rind, stock and lentils and bring to the boil. Reduce heat, cover and allow to simmer for 20 minutes, or until veggies are tender. Season to taste and serve with wholewheat bread.
