Yellow rice with raisins

  • 500
  • 250
    uncooked rice
  • 10
  • 2
    sticks cinnamon
  • 3
    cardamom pods
  • salt and sugar to taste
  • 80
    seedless raisins or sultanas


Bring water to the boil, then add rice, turmeric, cinnamon, cardamom pods, salt and sugar.
Reduce heat, cover and simmer gently for 20 minutes, or until rice is cooked through and all the liquid has been absorbed.
Pour rice into a colander and rinse under running water to remove excess turmeric. Return to saucepan.
Add raisins or sultanas, mix in lightly and steam gently for a further 15 minutes. Add butter and fluff rice with a fork.
Serve with Tomato bredie.
