Yellow rice with chickpeas

  • 30
    olive oil
  • 2
    onions, sliced into rings
  • 4
    cardamom pods, crushed
  • 8
    whole cloves
  • 275
    uncooked rice (preferably basmati)

    bay leaves
  • 850
    chicken stock
  • salt and pepper to taste
  • 410
    chickpeas, drained


Heat the oil in a pan and sauté; the onion, cardamom pods and cloves until the onion is glossy. Add the rice, turmeric and bay leaves and stir-fry until the rice begins to brown. Add the chicken stock, reduce the heat and simmer until the rice is done. Season with salt and pepper to taste and add the chickpeas. Heat until warmed through and serve with the meat.
