Ingredients (15)

YELLOW RICE RING
15.00 ml oil
200.00 g rice — uncooked
5.00 ml salt
5.00 ml turmeric
500.00 ml water — boiled
beef mince
400.00 g beef mince
oil — for frying
1.00 red pepper — diced
1.00 green pepper — diced
1.00 green apple — cored, peeled and diced
15.00 ml curry powder — mild
440.00 g pineapple — tinned, crushed
salt and freshly ground black pepper — to taste
45.00 ml fresh parsley — chopped

Method:

Preheat the oven to 100 ºC (200 ºF). Spray a ring mould with non-stick spray. Heat the oil in a pan and stir-fry the rice for about 2 minutes in the oil. Add the salt, turmeric and boiling water, reduce the heat and simmer until rice is tender and most of the liquid has been absorbed. Press the rice firmly into the prepared ring mould and bake for 15 minutes. MINCE:
Brown small quantities of the mince at a time in a little heated oil. Remove from the pan and set aside. Sauté the red and green peppers in the oil in the pan until soft. Add the apple and curry powder and stir-fry for about one minute more. Add the crushed pineapple including the juice, and the cooked mince. Mix and season to taste with salt and freshly ground black pepper. Simmer until the mixture is heated through and sprinkle with the chopped parsley. Carefully turn out the rice ring on a serving platter. Spoon the mince inside the ring and around it.
Serves 4-6.
