Ingredients (11)

1.00 kg chicken breast fillets
1.00 eggs
25.00 ml soy sauce
10.00 ml fresh ginger — grated
salt and freshly ground black pepper
10.00 ml sugar
SAUCE
125.00 ml sherry
125.00 ml soy sauce — dark
50.00 ml vinegar
15.00 ml sugar
5.00 ml cornflour

Method:

1. CHICKEN BALLS: Process chicken meat and add the remaining ingredients and process until smooth. Use wet hands to form the mixture into 16 balls.
2. SAUCE: Mix all the ingredients in a frying pan and heat to boiling point. Remove from heat, add balls and return to heat. Reduce heat to low immediately, and simmer until the balls are cooked.
3. TO SERVE: Fill pita breads (see recipe or use bought ones) with balls and garnish with watercress and lettuce.
Makes 16 balls.
