Ingredients (19)

500 ml flour
20 ml baking paper
10 ml cinnamon — ground
5 ml dried mixed spice — ground
5 ml salt
125 ml butter — softened
125 ml oil
375 ml castor sugar
30 ml water
eggs — beaten
5 ml vanilla — essence
2.5 ml (½ t) gerasperde geel
lemon — finely gratedrind and juice
25. ml walnuts — chopped
500 ml carrots
caramel — glaze
250 g cheese
500 ml icing sugar
walnuts — or pecan nuts

Method:

1. Voorverhit die oond tot 180 ºC (350 ºF). Smeer ’n groot ringpan of twee middelslag-koekpanne en voer dit met
bakpapier uit.
2. Sif eerste vyf bestanddele saam.
3. Klits botter, olie, strooisuiker en water saam tot lig en romerig.
4. Klits die eiers by die bottermengsel in. Voeg die geursel en/of skil by en meng goed.
5. Vou die droë bestanddele daarby in.
6. Roer neute en wortels liggies in.
7. Skep in voorbereide pan(ne) en bak 45 minute lank. Keer uit en laat afkoel.
8. Giet karamel-glansversiersel of roomkaasversiersel oor en versier met okkerneute of pekanneute.
