Ingredients (12)

60.00 ml orange juice — fresh
45.00 ml onion — finely chopped
45.00 ml vinegar — balsamic
10.00 ml Dijon mustard
5.00 ml garlic — cloves, crushed
125.00 ml olive oil — or sunflower oil
OTHER
300.00 g rice — white and wild mix
100.00 g pecan nuts — chopped, toasted
375.00 ml fresh parsley — chopped
180.00 ml peaches — thinly sliced
SALAD DRESSING
180.00 ml apricots — thinly sliced
sea salt and freshly ground black pepper

Method:

Beat all the ingredients for the salad dressing together, except the oil. Gradually add the oil while beating continuously. Drain the rice and mix with the salad dressing, nuts, parsley and dried fruit. Season and chill. Serve at room temperature. Serves 8-10.
