Wild rice and chicken salad

    long-grain with wild rice mix
  • 1
    red pepper- chopped
  • 1
    onion, sliced
  • 5
    ground mixed spice
  • 100
    chicken breast fillet- sliced
  • 2
    celery sticks- cut into chunks
  • salt and freshly ground black pepper, to taste
  • lettuce to serve


In a steamer or a pot,  cook the rice as per packet instructions. Add the mixed spice and allow to cool.

Add the chicken and celery to the steamer and cook for 5-10 minutes until the chicken is cooked through. Season and allow to cool.

Slice the red pepper and onion. Combine the chicken and celery with the rice and add the red pepper and onion. Mix in enough lettuce as you desire.

Serve alone or as a satisfying side dish.
